Instructions

Create the marinade by pureeing the thyme, garlic, ginger, scallions/chives, culantro/ cilantro, lime juice, salt and scotch bonnet peppers in the blender. Pour on chicken wings and allow for marinating for 2-3 hours or overnight.

Mix the flour, turmeric and cumin powder together for dredging the marinated meat.

Heat the oil for deep frying to 350 F or until the oil begins to bubble slightly.

For an extra spicy Tamarind Wing, drizzle with Chatak Lava Sauce.

Remove the chicken wings one by one form the marinade and pat dry with a paper towel and coat lightly in the flour mixture and place gently into the deep frying pot.

½ cup fresh thyme
6 cloves garlic
¼ cup minced ginger
½ cup chives/ scallions
¼ cup culantro leaves ( or ½ cup chopped cilantro)
½ cup lime juice
2 tsp salt
1 tsp chopped scotch bonnet peppers
4 pounds chicken wings (skin on and bone in)

1tsp Chatak Saffron (Turmeric) powder
1tsp Chatak Grounded Roasted Geera (Cumin Powder)
1 ½ cups Chatak Tamarind Chutney
2 tbsp brown sugar
1 tsp salt
1 cup water
Oil for deep frying
Toasted sesame seed to garnish

Allow the wings to fry for about 15minutes until golden brown and crispy. Remove from the oil and drain.

Make the Tamarind Sauce using Chatak Tamarind Chutney, salt, sugar and black pepper to taste in a sauce pot. Add water slowly and simmer until a medium thick sauce is achieved. (about the consistency of a Buffalo sauce)

Place the fried wings into a large bowl and douse with tamarind sauce and toss lightly to coat evenly. Allow to soak for about one minute and remove to serving platter.

Garnish with toasted sesame seeds and choice salad vegetables or other sides.
